Ran across this recipe in an old recipe book and thought I would try it. I liked it well enough, but thought it needed additionally ½ salt and ½ tsp cinnamon. It does make the raisins in the cookies nice and plump.
Cooked Raisin Oatmeal Cookies
1 cup sugar 2 cups oatmeal
½ cup butter 1 tsp vanilla
½ cup shortening 1 cup raisins, cooked
1 egg 5 T. liquid from raisins
½ cup brown sugar ½ tsp soda dissolved in above liquid
2 cups flour ½ tsp baking powder, added to flour
Use 1 cup water to 1 cup raisins, cook in microwave for 3 minutes. Cream sugar, shortening and butter. Add egg and beat. Add flour, oatmeal, baking powder and mix. Add liquid raisins with soda added and mix. Stir in raisins. Bake in 350 degree oven until edges are brown.
