Fall is here and there is a chill in the air. Time to start thinking about soups to warm the bones. This soup is quick and easy and yummy. Enjoy!

New York Clam Chowder

2 T. butter, melted
¼ cup each celery, onion, and carrots, chopped and diced
1 medium potato, diced fine
1 cup water
1 16 oz can tomatoes, cut up
1 tsp salt
1/8 tsp pepper
1/8 tsp dried thyme leaves
1 can minced clams with juice

Serves 2. Saute onion, celery and carrots and potatoes in melted butter in microwave safe 6 cup container, covered for 7 minutes. (My new microwave is 1100 watts and it only takes 4-5 minutes so watch or you will have dehydrated veggies.)
Add water, tomatoes and seasonings. Cover and microwave for 12 minutes. Add clans with juice, microwave for 1 minute more.
