Have you all been busy making cookies for Christmas giving? I made several batches and put them in the freezer earlier in November. Isn’t that what those dark, cloudy, dreary days are for? You might consider have a cookie exchange party. Everyone brings 3 dozen cookies and each person takes 3 dozen home of assorted cookies from the collection. Take some copies of your recipes and share them with the cookies. What is it Martha Stewart says?? “It is a good thing” sharing with your friends and having fun too.

One of my favorite cookies is fairly simple to do and doesn’t have very many ingredients. Apple cookies is the recipe I have chosen for today.

Apple Cookies

1 cup sugar
2 cups flour
½ cup shortening (not butter)
1 tsp soda
1 tsp vanilla
1 tsp baking powder
1 medium apple peeled, cored, and Shredded
1 tsp salt

Shred peeled apple. Sprinkle vanilla over apple. In large bowl cream sugar and shortening. Add shredded apple. Add dry ingredients and mix. Form into small balls (I like about 1”.) Roll in cinnamon sugar mixture (See below.) Place on ungreased cookie sheet. Bake in preheated 350 degree oven for 7-12 minutes depending on size of balls. Cool for 2-3 minutes on cookie sheet and remove to wire rack to finish cooling.

Cinnamon-sugar mixture:
2 T. sugar,
½ tsp nutmeg,
¼ tsp cinnamon

Note: I have found that Delicious apples are the juiciest and work well with this recipe; a medium size apple is best. Size of apple and kind of apple greatly effect this recipe. Enjoy!!!
