What to try something new different in the pumpkin area for Christmas? This recipe came from Yuma, Arizona. The lady says she made this for Thanksgiving and her family loved it. “It is like pumpkin pie without the crust, and who likes crust anyway?” she says. And the best part is that it is really easy to make and good served warm or cold. ( I will take her word for all of this as I am not a pumpkin fan.)


Pumpkin Crunch

1 16 oz can pumpkin
1 12 oz can evaporated milk
3 eggs (slightly beaten)
1 ½ cups sugar
4 tsp. Pumpkin pie spice
½ tsp salt
1 box yellow cake mix
1 cup pecans or walnuts (chopped)
1 cup butter, melted

Grease bottom only of 9 x 13 pan.
Combine 1st six ingredients; mix with spoon - do not use electric mixer. Pour into pan. Sprinkle dry cake mix over top evenly.
Sprinkle chopped nuts over top of cake mix and pour melted butter over this.
Bake at 350 degrees for 55- 60 minutes.
