Those of you who have gardens, have you picked any cucumbers yet? I picked two last week and they were really delicious. Today’s recipe is a cucumber salad.

Did you know that cucumbers were believed to have originated in India and spread through Greece and Italy. They made their way into North American agriculture in the mid 16th century, probably by Columbus. They are one of the oldest cultivated vegetables being cultivated since 8000 B.C. In Roman times Emperor Tiberius had them planted in carts and had slaves move them around to catch the sun.

Cool and moist due to their high water content (95%), they have almost no nutritional value. Sometimes the inside of the cucumber can be as much as 20%F. cooler then the outside. They are members of the same family as pumpkins, zucchini, watermelon and other squashes.

Crisp Cucumber Salad

2 medium cucumbers, peeled and thinly sliced (see note)
4 green onions, thinly sliced
½ small red bell pepper, chopped
¼ cup sour cream
2 T. white vinegar
2 T. sugar
1 ¼ tsp salt
¼ tsp pepper

In a medium bowl combine the cucumbers, onions and red pepper.
In a small bowl, combine the remaining ingredients and pour over the cucumber mixture. Cover and chill at least 2 hours before tossing and serving.

Note: I like peeled cucumbers, but you can also leave them unpeeled, or run a fork down the sides before slicing them to give them a fancy ridged look. Enjoy!!!
