Do you have kids going away to college? I don’t know about your kids or grandkids, but mine love lasagna in just about any shape or form. I got a tip this week on a really quick lasagna that a college kid could put together plus it is a small recipe. That has been my problem with lasagna. All my recipes are huge!! This one I think could even be made smaller by using ½ lb ground beef, 1 ½ cups of pasta sauce (half a can or jar- use the other half for spaghetti later in the week ), ¾ cup cottage cheese and mozzarella cheese. Use an 8 inch square pan and that should be just about enough for my grandson, Kirk. Too save time it could be prepared the night before and put in the refrigerator and baked the next day. That would cut serving time down by half an hour. Here is the recipe.

Lickety-Split Lasagne

Serves 6 (only if you are really old folks)

12 oz ground beef
2 ½ cups spaghetti sauce
6 lasagna noodles
1 ½ cups cottage cheese
1 ½ cups shredded mozzarella cheese (6 oz)
2 T. grated Parmesan cheese

Cook meat in a large skillet over medium high heat until brown, stirring and breaking up the meat. Remove skillet from heat and drain off fat.
Spoon 1 cup of the spaghetti sauce in the bottom of a 2 quart rectangular baking dish. Stir remaining spaghetti sauce into meat in skillet. Cook over medium heat until hot. Remove meat mixture from heat.
Place 2 uncooked noodles on sauce in bottom of dish. Spread 1/3 of the meat mixture over the top of the noodles. Spread ¾ cup of the cottage cheese over meat. Sprinkle with ½ cup of the mozzarella cheese over cottage cheese. Add another layer of 2 noodles, 1/3 of meat mixture, the rest of the cottage cheese and ½ cup mozzarella cheese. Layer remaining noodles, meat mixture and mozzarella cheese.
Sprinkle Parmesan cheese over the top.
Cover baking dish with foil. Bake in a 350 degree preheated oven for 1 hour. Remove from oven and let stand with foil cover for 15 minutes. Remove foil, (watch out for steam.) Cut and serve with salad and garlic bread.

This isn’t as fancy as my recipe but it is quick and we liked it. Enjoy !!
