Cooking outside is a great way to keep the kitchen cool and prepare a meal quick. Here is a recipe for preparing salmon that is delicious and easy. I happen to have a rosemary bush so that makes it easier. I have noticed that rosemary is available to plant at Walmart! The cedar planks are available there also.
Grilled Salmon
1 cedar plank
1 # salmon fillet
Salt and pepper
1 small onion thinly sliced
1 clove garlic, minced
1 T. mustard seed
1 green onion, chopped ( can used chopped chives)
1 T. chopped fresh rosemary
1 T. rice wine vinegar
1 T. olive oil
Soak plank in water one hour. Season salmon with salt and pepper. Place on plank.
Stir together onion and next 6 ingredients. Spoon onion mixture over salmon, press firmly. Cook in covered grill (350-400) 15 to 20 minutes.
