Are you a chocolate lover? Here is triple chocolate treat that will satisfy the most discriminating cocoa-fiend.
Truffle Cookies
8 oz. Bittersweet chocolate, chopped
3 T. butter
2 eggs
½ cup packed brown sugar
¼ cup granulated sugar
¼ cup flour
2 T. unsweetened cocoa
1 tsp vanilla
½ tsp baking powder
6 oz bittersweet chocolate, chopped
Optional, additional cocoa or powdered sugar
30 minutes to prepare. Baking time 7-9 minutes
Preheat oven to 325 degrees.
In a heavy medium saucepan melt the 8 oz of bittersweet chocolate and butter over low heat, stirring frequently. Add eggs, brown sugar, granulated sugar, flour, the 2 T. cocoa, vanilla, and baking powder. Stir until combined, scraping sides of pan occasionally. Stir in the 6 oz. Of chopped bittersweet chocolate.
Drop dough by slightly rounded teaspoon 1 inch apart onto ungreased cookie sheet.
Bake for 7-9 min. in 325 degree oven until edges are firm and surfaces are dull.
Do not overbake. Transfer cookies to a wir rack; cool. If desired, sift cocoa powder or powdered sugar over the tops before serving. Makes. 48 cookies.
