You probably think I am hooked on asparagus as here comes another asparagus recipe. This one is from the asparagus website!!!! Did you know that there is an asparagus festival in Stockton, California? This year is their 20th year.
San Joaquin County’s most prestigious agricultural product sparked this 3 day multi-event, food and entertainment festival 20 years ago this month.
The festival has 2 performing stages, an Asparagus Alley with the best deep fried asparagus found anywhere. (Their statement.) There are craft shows and celebrity chefs. The festival occurs April 22-24 of this year and is a charitable event.
Have any of you ever attended it? Here is this weeks recipe. It is very similar to one that I use that is in my cookbook.
Roasted Asparagus
Clean and prepare enough asparagus for the number of people you are serving.
Preheat your oven to 450 degrees.
Toss asparagus with olive oil and minced garlic and sprinkle with salt and pepper; single layer on baking sheet. Bake for 8-12 minutes stirring once until crisp tender. Drizzle with Balsamic vinegar and serve on a platter.
That’s it. Very simple. Very elegant. Enjoy!
