Daughter Gayle is in correspondence with some of her dieting friends via the internet. One of them recently sent her a recipe for “pulled pork”. She tried it and we all liked it so I am sharing with all of you.
Some pork facts: Throughout history pork has been the most widely eaten meat in the world and still is today. In 2002 American meat packers produced 19.7 billion pounds of pork. Wow! That’s a lot of bacon and ham.
Pulled Pork BBQ
3 T. paprika or 1 T. and 1 T. red pepper (in case you don’t have 3 T. paprika)
1 T. garlic powder
1 T. brown sugar
1 T. dry mustard
3 T. sea salt ( I’m a purist, I used the sea salt, but Gayle used regular salt)
1 5-7 lb pork roast ( shoulder or Boston Butt)
Mix the paprika, garlic powder, brown sugar, dry mustard, and salt. Rub all over the pork roast and refrigerate at least 1 hour, (several hours or overnight is best). Preheat oven to 300 degrees. Place in roasting pan and cook for 6 hours or until it falls apart. Let rest 10 minutes. While still warm, pull the meat. Use 2 forks. One to steady and one to shred. Serve on buns and top with slaw or BBQ sauce. Serve with pickles and remaining sauce.
Gayle used the crock pot as she was going to be gone all day and it worked well. I covered the roast with aluminum foil for 5 hours then loosened the foil, but left it lay over the roast. It seemed to make more juice that way. She also did it the regular way and we worked well too. Enjoy!
