I am always looking for ways to used left over roast pork. I found this and my family really likes them.
Cabana Sandwiches
1 tsp balsamic vinegar
1 T. olive oil
2 slices sourdough bread
2 thin slices Monterey jack cheese
4 thin slices of leftover roast pork
1 dill pickle, slices
Dijon style mustard
Hot pickled peppers
Blend vinegar and olive oil. Brush outside of bread slice. Spread inside of one slice with mustard. Add pork and cheese. Top with 2nd slice of bread that has had vinegar/oil brushed on it.
Melt 1 tsp butter in skillet on med. Heat. Place sandwich in pan and weigh it down. I mashed it with a spatula. Sauté on medium until golden brown, about 2 minutes on each side. Repeat with other sandwiches. ( I cooked two at once) Serve with peppers and dill pickle.
