This recipe come from Nancy Borst in Goddard, Ks. She says this is a rich, sweet cake - for serious cake-eaters only! It has been her birthday cake for as long as she could remember. She is hoping everyone will enjoy it as much as she does.
Strawberry Cake
1 pkg. white cake mix (preferable without pudding)
2/3 c. salad oil
1 pkg strawberry gelatin
4 eggs
1/2 c. water
1/2 pkg frozen strawberries (small)
Combine all ingredients and beat for the time given on the box. Bake in greased and floured 13 x 9 pan at 350 degrees for 45 minutes.
Icing
1 box powdered sugar
1/2 pkg frozen strawberries
1 stick margarine
Combine the icing ingredients, adjusting the amount of powdered sugar to produce the desired consistency (this may be needed to keep the icing from being too runny.) Beat with mixer until light and fluffy. Spread over cooled cake.
