Here is a really good recipe from my friend Margaret who is suffering chemo treatments still. All prayers accepted!!----
TRULY MOIST BAKED CHICKEN
1 roasting hen (5-6#)
¾ cup (total) any Balsamic vinegar SALAD DRESSING
¾# carrots, sliced thin & cut into chunks
4 stalks celery, cut into chunks
½-1 large sweet red pepper, slivered
Make it: Preheat oven to 350%. Wash and pat chicken dry with paper towels. Using fingers,
separate skin from meat on both sides near bottom. Be careful not to break the skin. Brush the
bottom of chicken with ¼ cup of Balsamic salad dressing. Tuck wings under the chicken to keep
the tips from burning.
Pour ¼ cup of the Balsamic dressing under the skin on both sides of the chicken, plus some on
the top of the breast side of the chicken.
Mix carrots, celery and red pepper in the last ¼ cup of Balsamic dressing. Spoon it in the cavity.
Bake for 2 to 2-1/2 hours or until juices run clear when pricked with a knife. About halfway
through cooking, tent aluminum foil over the chicken if the skin is too crisp.
Let stand for 10 minutes. Remove vegetables from the chicken to a vegetable dish. Cut chicken
into serving pieces and serve on a platter.------
