This week I was given a “new” cookbook as a present. It was entitled “Searchlight Recipe Book”. This recipe book was first published in 1931. The recipes were originally contributed by readers of the HOUSEHOLD MAGAZINE published by Capper’s Weekly. How many of you remember the Capper’s Weekly newspaper? I remember my mother could hardly wait for it to get there as it a continued series story in it every week. She also really loved the recipes. Going though her recipe card file when I was writing my cookbook, I found several recipes cut from a Capper’s weekly and pasted on a card.

Anyway the Household Magazine was discontinued in 1958 and the cookbook went out of print in 1960’s. Many people wrote the current Capper’s weekly asking where they could get copies of this practical cookbook as their family copies were worn out or their mothers would not part with theirs. So in 1977 Capper’s put out this new cookbook using the old recipes. It was a delight to read.

Some of those recipes I haven’t heard of in years--baked heart, creamed sweetbreads, pickled pigs feet to name a few. I found a recipe for pressed chicken.

Now our family grew up on pressed chicken sandwiches. I am including this recipe, however, my mother made hers a little different. She only used poultry seasoning, salt and pepper for seasoning and no gelatin as there is quite a bit in the chicken itself. Remember this recipe was written in the 30’s and 40’s. Enjoy!!!

Pressed Chicken from the Searchlight

Cut chicken in pieces. Cover with water. Add 1 teaspoon salt and ¼ tsp pepper. Cover. Simmer slowly until meat falls from bone. Remove meat and bones from broth. Add 1 bay leaf, a few cloves, ½ teaspoon celery seed to broth. Boil 10 minutes. Strain. Add 1 tablespoon gelatin, which has been softened in 2 tablespoons cold water to each pint of broth. Stir until dissolved. Separate bones and meat. Shred meat. (We ground ours.) Combine meat and broth. Mix thoroughly. Pour into mold. Cover chicken with a plate. Weight down. Chill until firm.
