Are you loaded down with lots of tomatoes? Do you like salsa? Here is
the recipe for you. This was contributed by Gayle Hamblin. She says
she got it from an 1982 farm journal. She has made it several times
and her family really likes it. It does take a little more time.
HOT SAUCE
3 quarts tomatoes, peeled and chopped
3 onion, medium sized
2 cups jalapeno peppers, sliced
3 garlic cloves
2 T. salt
1/4 cup sugar
1 1/4 cup white vinegar
Peel and coarsely chop tomatoes to measure. Put tomaotes, onions,
peppers, and garlic in food processor or blender and chop (finely, but
do NOT liquify completely.) Combine with remaining ingredients in
sauce pan and simmer uncovered for 20 minutes. Pack in sterlized
jars. Seal and process in hot water for about 10 minutes. Remove and
store. Yields about 8 pints.
Make it mild or hot by the amount of jalepenos you use. As given, it
is moderately hot.
