Recently I was going through some of my mother’s old recipes and ran across a recipe for Chocolate Angel Food Cake. Do you remember those? Anyway, eggs are fairly inexpensive right now, you might want to try this. The eggs need to be cold before you start.
Chocolate Angel Food Cake
1 ½ cup egg whites
Pinch of salt
1 ½ tsp cream of tartar
2 cups sugar
¼ cup cocoa
1 cup flour
1 tsp vanilla
Add salt to egg whites and beat until frothy. Add cream of tartar, beat until stiff. Fold in sugar which has been sifted 5 times (powdered sugar?). Add vanilla. Fold in flour and cocoa which was been sifted five times. Bake for 1 hour 10 minutes or until done. Preheat the oven at 300 degrees. Good luck!
