Last month I spent the night in Manhattan with old former Kingman friends, Norman and Mary Alice Schlesener. It is always special to be able to spend time with friends that you haven’t seen for a while. There is so much to talk about. Needless to say it was time well spent. Norman and Mary Alice are always gracious hosts and a meal is always special. Norman is addicted to Mexican food for those who remember and the meal that I shared with them was a Mexican Soup called “Posole”. It was really unusual. Had I seen the recipe in a book or magazine, I would probably not even considered it for a try, but after eating the soup, I am sharing the recipe with you. Hope you like it.
Posole
1 lb or more of lean pork, cut in small pieces
˝ large white onion, chopped
1 large garlic clove, minced
˝ tsp ground cumin
1 T. chopped fresh cilantro (or parsley if you can’t find cilantro)
Salt, black pepper
1 small can green chilies, chopped
1 14 oz can hominy
1 14 oz can chopped tomatoes
1 can chicken broth
Cut pork in bite size pieces and brown in small amount of oil. Add onion, broth and spices. Simmer until meat is tender.
Add tomatoes, green chilies, hominy and simmer until ready to serve.
Serves 4-6. Enjoy! (I did)
