Chow Mein
Serves 4
1 ½ lb. Lean pork or chicken, diced
¼ cup cornstarch2 tsp sugar
4 T. soy sauce
2 T. oil
2 more T. oil
2 cups water (add 2 bouillon cubes if using chicken)
11 ½ cup celery, diced
1 cup onion, chopped
1 small can water chestnuts, sliced
1 can bean sprouts (2 cups)
1 can mushrooms
Salt and pepper
Green onions
Slice meat. Combine 2 t. cornstarch with sugar. Blend in 1 T. soy sauce and 2 T. oil. Let stand 10 minutes. Brown meat in other 2 T. hot oil. Add the rest of the soy sauce, 1 ½ cups water. Simmer 45 minutes. Add celery and onion. Simmer 10=15 minutes more. Add water chestnuts, bean spouts and mushrooms. Heat then add salt and pepper to taste. Garnish with green onions cut into lengthwise strips. Serve with crisp fried noodles.
