Lemon Tilapia
Tilapia is a fresh water fish with a really mild flavor. It is becoming more readily available all the time and is relatively inexpensive.
4 tilapia fillets (fresh or frozen)
1 T. olive oil
1 T. butter
1 lemon
salt & Pepper
flour to dredge
1 T. parsley
If fillets are frozen, defrost in refrigerator or cold water. Pat dry and dredge in flour and salt and pepper. Shred about 1 tsp of zest from lemon. Then heat skillet, put in olive oil and butter and let melt. Add lemon zest and fish fillets. Salt and pepper. Fry about 5 minutes on each side until flaky. Squeeze juice from lemon. Add to juice and parsley to skillet and let lemon reduce. Whole process will take about 10-15 minutes.
