Want to do something special for the guy in your household for Father’s Day? Try this recipe on for size! (That is, if you are not taking him out.) It is quick, easy, and elegant looking. With a little extra on the side like a special bread from one of the gourmet bread shops that have popped up, a packaged mixed greens salad with a balsamic dressing, scalloped potatoes for two, and hot fudge pudding cake for dessert! I think he will love you for it!

Citrus Pork Chops

4 butterfly pork chops ¾” thick
1 T. oil
¼ c. sliced green onions
1 T. grated orange peel
½ cup orange juice ( 1 large orange will provide both of these ingredients.)
¼ tsp dried basil

For two use only 2 pork chops, but leave everything else the same.

Heat oil in large skillet. Add green onion and orange peel, sauté 3-4 minutes or until onion is almost tender. Remove onion and orange peel to small plate; set aside. Add pork chops and brown on both sides over medium heat; add onion and orange peel to meat. Add orange juice and basil. Cover and simmer for 10 minutes. Place pork chops on platter and spoon sauce over them. Enjoy!
