Have you been wondering what to do or give to that special someone in your life for Valentine’s Day? Flowers is good. Out to dinner is better, but how about breakfast in bed??? I was given that gift one Valentine’s Day and loved it! Worth a try? Here is my choice for a special breakfast ( it could also be used for any other meal if you like). This recipe is actually for 2 people.

Puffy Omelet Cahuenga

Puffy Omelet:

3 eggs
3 T. water or milk
¼ tsp salt
1/8 tsp pepper
1 T. butter or margarine

In small mixer bowl, beat egg whites until stiff but not dry. Beat egg yolks until thick and lemon colored. Beat in milk or water, salt and pepper; gently fold into eggs whites with a rubber spatula.
Heat oven to 325 degrees. In 8 inch skillet with ovenproof handle, heat butter until just hot enough to sizzle a drop of water, rotating skillet so that butter evenly coats the bottom. Pour omelet mixture into skillet; level surface gently. Reduce heat; cook until puffy and light brown on bottom, about 5 minutes. (Lift omelet at edge to judge color.) Place skillet in oven; bake until knife inserted in center comes out clean about 12-15 minutes.

Sauce:

1 ripe small avocado
¾ cup sour cream
½ tsp salt
1/8 tsp dill weed
1 large tomato, peeled, diced and drained

While omelet bakes, peel and dice avocado. Heat sour cream, salt and dill weed. (Do not boil.) Gently stir tomato and avocado into sour cream mixture. Heat though. To serve, pour part of the sauce on omelet in skillet. Tip skillet and loosen omelet by slipping rubber scraper, pancake turner or spatula under; fold omelet and remove to heated platted. Pour remaining sauce over the top.

Want some meat with your omelet? Put ½ pound of Canadian bacon in ungreased shallow dish and drizzle 2 T. maple flavored syrup over it. Place in the oven while it heats and while you are baking the omelet. Enjoy!!
