Are you up to your neck in summer squash yet? Recently I was reading a Southern Living magazine. (In case you haven’t notice, the people in the south eat differently then we do -for example grits or okra!!!!) As you may remember, I have been really hung up on herbs lately. In this magazine was a whole article just on using herbs in cooking!!! Wow! I had to have a couple of those recipes! The one I am sharing with you is for yellow squash. We really liked it. If you don’t have fresh rosemary try dried, but it would just be about 1/8 tsp.

Marinated Squash

3 medium yellow squash
3 celery ribs
3 carrots
3 green onions
¾ cup olive oil and vinegar dressing
1 tsp sugar
1 tsp chopped fresh rosemary

Clean, and chop the first 4 ingredients. Set aside. In a small bowl mix dressing, sugar, and rosemary. Mix with vegetables. Chill at least 3 hours.
Note: They used Paul Newman’s oil and vinegar. I did not. It might make a difference in flavor depending on which one you use or if you like make your own. However, olive oil does not stay in suspension very long and congeals when chilled. Purchased dressings usually do not do that. Enjoy!!
