Fiesta Chicken Soup

Dear Jerry,

Chase off winter's chill with a hearty soup supper tonight while you count down to the holidays.



Fiesta Chicken Soup

Ingredients:
Vegetable cooking spray
1 lb. boneless chicken breasts, cut into cubes
1 large green OR red pepper, coarsely chopped
2 tsp. chili powder
1 tsp. garlic powder
3 1/2 cups SwansonŽ Natural Goodness™ Chicken Broth
1 pkg. (10 oz.) frozen whole kernel corn
1 cup cooked rice
1 tsp. chopped fresh cilantro OR parsley (optional)
5 lime wedges


Directions:
SPRAY saucepan with cooking spray and heat 1 min. Add chicken, pepper, chili powder and garlic powder and cook 5 min., stirring often.
ADD broth, corn and rice. Heat to a boil. Cook over low heat 10 min. or until chicken is done. Stir in cilantro. Serve with lime wedges. Serves 5.

Serve this hearty soup with warm flour tortillas or crisp tortilla chips. Offer orange wedges and holiday cookies for dessert.
