Greetings All. My apologies for not keeping the website up to date with new recipes and all, but I've been ailing again with heart and back problems, plus problems accessing the website from the program I use to update.
Finally everything is fixed (or mostly fixed in the case of my health. They got me doing sleep studies now). So be sure and check the last couple months in the archives and I will try to get new recipes up each week again.


Merry Christmas to all. We wish you all the best with a bit of KState purple and a BIG HOURRAH!! for them to win the bowl game. The Graham clan are all going to the game. I'm staying home with my kids and grandkids. Hopefully they won't tear the house down. James is in Santa Fe working hard, but all the rest should be here for Christmas. And a Christmas Prayer and a lot of love for my friend Margaret who has been diagnosed with the Big C and will be going in for surgery soon.

Are you worn out and frazzled from Christmas shopping and food preparation?
This is a quick, easy and delicious soup. Enjoy!

Vegetable Beef Soup

½ pound ground beef
1 (14.5) oz can stewed tomatoes
1 8 oz can tomato sauce
2 cups water
1 10 oz package frozen mixed vegetables
¼ cup dry onion soup mix
1 tsp white sugar
(I also added 1 small potato, peeled and diced small.)

Brown ground beef for about 5 minutes or until pink is gone; drain.
Add the rest of the ingredients. Bring to boil. Reduce heat to low. Cover and simmer for 20 minutes.

Dear Jerry,
Let this be the year you host that smashing holiday party. We'll help you plan a menu to wow your guests, but not leave you tired and frazzled before the party begins.
Start the party with Pepperidge Farm Grilled Artisan Bread with Middle Eastern Dips. Easy and so delicious! The Beef Wellington is sure to impress your guests, and yet it's so effortless to prepare. And finally, the Puff Pastry Christmas Trees end the evening on a charming note!

 

Beef Wellington
MAIN DISH

Thaw Time: 40 min.
Prep Time: 30 min.
Bake Time: 25 min.
Chill Time: 1 hr.

INGREDIENTS


2- to 2 1/2-lb. beef tenderloin (filet mignon)

Ground black pepper (optional)

1/2 pkg. (17.3 oz.) Pepperidge Farm® Frozen Puff Pastry Sheets (1 sheet)

1 egg

1 tbsp. water

1 tbsp. butter OR margarine

2 cups finely chopped mushrooms

1 medium onion, finely chopped

 

DIRECTIONS


PLACE beef in lightly greased roasting pan. Season with black pepper, if desired. Roast at 425°F. for 30 min. or until meat thermometer reads 130°F. Cover and refrigerate 1 hr.

THAW pastry sheet at room temperature 40 min. Preheat oven to 425°F. Mix egg and water.

HEAT butter in skillet over medium-high heat. Cook mushrooms and onion until vegetables are tender and liquid is evaporated.

UNFOLD pastry on lightly floured surface. Roll into rectangle 4" longer and 6" wider than beef. Brush with egg mixture. Spoon mushroom mixture onto pastry to within 1" of edges. Place beef in center of mushroom mixture. Starting at long sides, fold pastry over beef. Fold in ends. Press edges to seal. Place seam-side down on baking sheet. Brush with egg mixture.

BAKE for 25 min. or until golden and thermometer reads 140°F. Serves 10.
