Last Weeks Zucchini Bars

Here are a some good Tomato recipes to use up those extra tomatos.

I did this last night and it was really good.

Tomato-Mozzarella Salad

3-4 med. Tomatoes, peel if desired
1 tsp salt
2 T. olive oil
1 T. red wine vinegar
1 T. water
¼ tsp sugar
Romaine lettuce, shredded
2 T. basil chopped fresh or 2 tsp dried leaves
1 T. chives, chopped
½ tsp black pepper coarsely ground
4 oz. Mozzarella cheese, shredded, (1 cup)

Thickly slice tomatoes. Sprinkle with salt. Let stand 30 minutes.

Whisk together olive oil, vinegar, water, and sugar; set vinaigrette aside.

Line a large platter with lettuce. Arrange tomato slices, sprinkling basil, chives and pepper between layers of tomatoes. Drizzle 2 T. of the vinaigrette over tomatoes. Sprinkle cheese over top. Drizzle remaining vinaigrette over cheese. Let stand 15 minutes before serving for flavor to develop.

I skipped the lettuce and placed sliced cucumbers on and around the tomatoes. Delicious!!
Serves 4.


Marinated Tomatoes

6-9 thick slices of tomatoes
1 cup olive oil
1/3 cup wine vinegar
2 tsp leaf oregano
1 tsp salt
2 cloves garlic, pressed or minced
½ tsp pepper
½ tsp dry mustard

Arrange tomato slices in 8 or 9 inch glass dish. Mix the dressing ingredients with a whisk to thoroughly blend. Spoon over tomatoes. Cover and chill for 2-3 hours basting occasionally. To serve sprinkle with minced red onion or sliced green onion or snipped parsley over the tomatoes.
Note: Good way to use up those garden tomatoes.


Curried Tuna Salad in Tomato Cups

1 (7 oz ) pkg or can of tuna, drained and flaked ( like the packaged tuna, already drained)
½ cup chopped celery
1/3 cup chopped green pepper
2 T. chopped onion
½-1 Tsp curry powder
¼ tsp salt
Dash pepper
1/3-½ cup mayonnaise
4 med. Tomatoes

Serves 3-4. Lightly toss together all ingredients except tomatoes. With stem end down, cut each tomato into 6 wedges, cutting to but not through base of tomato. Spread tomato apart slightly. Sprinkle lightly with salt. Fill each tomato with tuna mixture. Place on lettuce leaves to serve.
This makes a quick and easy luncheon for unexpected company in the summer.
